High Protein Easy Fall Chicken Salad

HIGH PROTEIN EASY FALL CHICKEN SALAD

INGREDIENTS

  • 0.25 Cup, Low sugar cranberries
  • 2 cup, cooked, diced, Chicken breast, cooked, skinless (can also use pre-cooked rotisserie chicken)
  • 2 tbsp, Apple cider vinegar
  • 0.50 tsp, Dijon mustard
  • 0.50 cup, Cottage Cheese
  • 0.25 cup, Chopped Pecans
  • 3 stick, medium, Celery sticks
  • 0.25 cup, chopped, Red Onion, raw

 

INSTRUCTIONS

  1. Use a food chopper or finely dice the celery, onion, pecans (if needed).
  2. Blend cottage cheese until smooth and mix with diced ingredients.
  3. Add in cranberries, ACV and dijon mustard. Add additional seasonings and/or salt and pepper to taste.
  4. Enjoy!

 

SERVING TIPS: This comes out a dip like consistency. Serve on bread or dip some pretzels or crackers in it! You can also try dried cherries, apples, etc to mix up the taste of this chicken salad!
